
Sausages with Oven-Roasted Potatoes and Peppers
1. Prep the Vegetables
Wash and dry all ingredients. Cut potatoes into uniform pieces, slice peppers into strips, and cut onions thick enough to hold their shape.
2. Prepare the Sausages
Leave whole to retain juiciness, or cut into large chunks for extra browning.
3. Combine
Toss sausages, potatoes, peppers, and onions with olive oil and seasonings. Spread everything in a single layer on a large baking tray.
4. Roast
Preheat the oven to moderate-high heat. Roast in a single layer—avoid overcrowding to prevent steaming. Turn ingredients halfway through for even browning.
