Red Lentil Soup with Curry, Coconut Milk and Lime.

 

Ingredients:

– 250 ml coral lentils

– 1 chopped onion

– 2 cloves minced garlic

– 1 tablespoon grated ginger

– 1 tablespoon red curry paste

– 1 can coconut milk

– 120 ml vegetable stock

– Juice and zest of one lime

– Salt and pepper to taste

– Fresh coriander for garnish
