Red Lentil Soup with Curry, Coconut Milk and Lime.

1. Check the red lentils and set aside.

2. Heat a little oil in a large saucepan and sauté until translucent. Add the garlic and ginger and fry for another 2 minutes.

3. Add the red curry paste and fry briefly until fragrant.

4. Add the rinsed red lentils, coconut milk and vegetable stock. Stir well and bring to a boil.

5. Reduce heat and simmer until lentils are tender (about 20 to 25 minutes).

6. Add lime juice and zest. Season with salt and pepper to taste.

7. Blend until desired consistency is reached.

8. Garnish with fresh coriander before serving.
