Ingredients needed

- Potatoes: I used Russet potatoes
- Butter
- Onion: medium white onion, diced
- Cloves garlic: Fresh minced is best here.
- All-purpose flour: Helps to thicken the sauce.
- Heavy whipping cream: can be swapped for half and half
- Herbs: Fresh thyme, or dried thyme, and fresh parsley for garnish
- Gruyere cheese: You can use a white cheddar, Mozzarella cheese or a mixture.
