Perfect Hard-Boiled Eggs with Spiced Yolk Mash Recipe

Step 1: Boil the Eggs Properly

  1. Place eggs in a saucepan and cover with cold water, ensuring they’re submerged by at least an inch.
  2. Add salt and vinegar if desired.
  3. Bring to a gentle boil over medium heat.
  4. Once boiling, reduce heat slightly and set a timer for 9–10 minutes for firm yolks without discoloration.
  5. Immediately transfer eggs to an ice bath or cold water to stop cooking. Let sit for 5–10 minutes.
  6. Peel carefully and slice in half. If a green ring appears, proceed with the mash—it’s still usable and delicious.

Step 2: Prepare the Yolk Mash

  1. Scoop out the yolks into a mixing bowl.
  2. Mash with a fork until crumbly.
  3. Add mayonnaise or yogurt, mustard, spices, and salt. Mix until smooth.
  4. Stir in onions, herbs, lemon juice, and any optional ingredients.
