
Keto Cajun Shrimp & Sausage Stuffed Cabbage
- Prepare the cabbage:
- Cut the cabbage heads in half, remove the core, and separate the leaves. Blanch the cabbage leaves in a pot of boiling salted water for 2-3 minutes, until softened. Drain and set aside to cool.
- Alternatively, you can roast the cabbage halves in the oven with olive oil and salt, cut side down, for 20-25 minutes at 400°F (200°C) for a roasted flavor.
- Make the filling:
- In a large pan, heat the olive oil or butter over medium heat. Add the smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pan and set it aside.
- In the same pan, add the diced onions, bell peppers, and garlic. Sauté until softened, about 5 minutes.
- Add the shrimp to the pan and cook for 3-4 minutes until they turn pink and opaque.
- Stir in the Cajun seasoning, paprika, cayenne pepper, and cauliflower rice (or regular rice). Cook for another 3-4 minutes, allowing the flavors to meld together.
