Step-by-Step Instructions
STEP 1: PREHEAT & PREP
- Preheat your oven to 400°F (200°C) . Line a baking sheet with parchment paper or lightly grease it.
STEP 2: ROAST THE CAULIFLOWER
- In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Spread the florets in a single layer on the prepared baking sheet. Roast for 20–25 minutes , flipping halfway through, until the cauliflower is tender and slightly caramelized around the edges.
STEP 3: MAKE THE CHEESE SAUCE
- In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
- Gradually whisk in the milk, stirring constantly to avoid lumps. Cook for 3–5 minutes, or until the mixture thickens slightly.
- Reduce the heat to low and stir in the cheddar and mozzarella cheeses, one handful at a time, until melted and smooth.
- Season the sauce with garlic powder, onion powder, salt, and pepper to taste. Remove from heat.
