Apple and Lemon Pancakes

Prepare the apple:
Peel, core and grate the apple. Mix the grated apple with the juice of half a lemon to prevent browning and give it a fresh flavor. Set aside.
Mix the wet ingredients:
In a large bowl, whisk together the eggs, vanilla sugar, a pinch of salt, and 2 tablespoons of sugar until well combined.
Add the milk and oil to the egg mixture and whisk until smooth.

Mix the dry ingredients:
Sieve the flour and baking powder into a separate bowl.
Gradually fold the dry ingredients into the wet ingredients and mix until well combined. Do not overmix.

Add the apple:
Stir the grated apple into the batter until evenly distributed.

Prepare the crêpes:
Heat a non-stick frying pan or griddle over medium heat and lightly grease with oil or butter. Pour about 1/4 cup (0.6 dl) of batter into the pan for each crêpe.

Cook until bubbles form on the surface and the edges appear to be set, then flip and cook until golden brown on the other side, about 2 to 3 minutes per side.
