Instructions
Preheat oven to 175°C (350°F). – Grease a muffin tin or use a nonstick pan with oil.
Beat the eggs in a bowl until smooth.
Add the vegetables and spices, stirring until smooth.
Add the grated cheese and gently mix.
Dip the mixture into muffin cups, filling each cup ¾ full.
Bake for 15–20 minutes, or until the muffins are firm and lightly golden brown.
Let them cool slightly before serving.
