Let gelatin or agar come to room temperature:
Mix 1 ounce of agar or unflavored gelatin with 2 ounces of water in a small bowl. To soften and rehydrate, let stand for 5 to 10 minutes. Prepare the coconut milk mixer: Combine 16 ounces of coconut milk with 4 ounces of water in a medium saucepan. Heat (but do not boil) the ingredients in the saucepan over medium heat. Stir in 1 ounce of unsweetened cocoa powder. Continue whisking until all of the cocoa powder has dissolved and the liquid is smooth.
Once the coconut milk mixture is warmed, add the hydrated gelatin or agar.
Be sure to stir constantly until the gelatin or agar is completely dissolved and the liquid begins to thicken slightly.
Pour into a glass bowl or silicone molds and set aside. Smooth the surface with a spatula if necessary. Place the bowl or molds in the refrigerator to set. For best results, refrigerate the dessert for at least two hours before serving. Slice and enjoy! Carefully lift the dessert out of the molds once it has set.
