Spelt bread made with 100g of yogurt, which I bake weekly! 250g water 10g fresh yeast (1/4 cube) 350g 550 all-purpose flour…

First, heat the water and dissolve the yeast in it. Be careful, the water shouldn’t be too hot, or the yeast won’t activate! Meanwhile, dust a bowl with flour.

Next, combine the flour, yogurt, salt, honey, and vinegar with the yeast water in a stand mixer fitted with a dough hook and knead for about 4 minutes.

After this time, transfer the dough to the prepared bowl, lightly dust it with flour, cover, and let it rise in a warm place for at least 90 minutes.

Finally, fold the dough several times on a floured work surface and shape it into a loaf.

Next, make a slit in the dough, line a baking sheet with parchment paper, and lightly dust with flour.

Place the loaf in a cold oven on the lowest rack and set the oven to the highest setting. Bake for 30 minutes.

Then reduce the oven temperature to 200 degrees Celsius (390 degrees Fahrenheit) and bake for another 25-30 minutes.

To check if the bread is done, insert a toothpick.

Enjoy your meal!
