Step 1: Cook the Sausage
In a skillet over medium-high heat, cook the sausage until fully browned, breaking it into small crumbles as it cooks. Drain any excess fat carefully to keep the muffins from becoming greasy.
Step 2: Mix the Base
Preheat your oven to 350°F. In a large bowl, whisk together the eggs, shredded cheddar, and Bisquick until smooth and well combined.
Step 3: Combine and Fill
Gently fold the cooked sausage into the batter. Grease a 12-cup muffin tin (or use liners). Fill each cup about ¾ full to allow room for rising.
Step 4: Bake and Cool
Bake for 18–20 minutes, until the tops are golden and a toothpick inserted in the center comes out clean. Let the muffins rest in the pan for 2–3 minutes before removing.
