Preheat the oven to 180 °C (gas 6).
Separate the egg whites from the yolks in two bowls. Add the cream cheese, mustard and whipping cream to the bowl with the egg yolks. Beat until smooth and evenly combined.
Beat the egg whites with a pinch of salt until stiff, then carefully fold them into the batter with a spatula, lifting the batter up to retain the air.
