Puff Pastry Appetizer with golden filling

Step 1: Caramelize the Onions

Heat olive oil in a skillet over medium-low heat. Add the thinly sliced onions with a pinch of salt. Cook slowly for 20–25 minutes, stirring occasionally until they become soft, golden, and caramelized.
If you want more depth of flavour, stir in the balsamic vinegar during the last minute of cooking.
Remove from heat and let the onions cool slightly.

Step 2: Prepare the Puff Pastry

Preheat your oven to 400°F (200°C).
Place your thawed puff pastry on a lightly floured surface and gently roll it out to smooth the edges.
Cut the sheet into small 2-inch squares or use a round cookie cutter for a more elegant shape.

Step 3: Assemble the Bites

Place the pastry pieces on a baking tray lined with parchment paper.
Add a small teaspoon of goat cheese to the center of each pastry square.
Spoon a small amount of caramelized onion over the cheese.
Add a tiny sprig of thyme or a few rosemary leaves if desired.

Step 4: Add Egg Wash

Using a pastry brush, lightly brush the edges of each pastry square with beaten egg.
This gives the pastry a beautiful golden shine as it bakes.

Step 5: Bake

Bake in the preheated oven for 12–15 minutes or until the puff pastry is golden, crispy, and fully puffed.
Remove from the oven and allow to cool for a few minutes.

Step 6: Serve

Serve warm, optionally garnished with a drizzle of honey or extra fresh thyme.
