Oven Roasted Smoked Sausage and Potatoes

  1. Chop Ingredients: Cut the turkey sausage into large chunks. Chop the onion into large chunks. Wash and pat the baby red and golden potatoes dry, then cut them in half.
  2. Combine and Season: In a large bowl, add the sausage, onions, and potatoes. Drizzle with 1 tablespoon of olive oil and toss everything to coat. In a small separate bowl, mix together the salt, black pepper, smoked paprika, and Cajun spice. Sprinkle this seasoning mixture over the sausage and potato mixture, then toss again until everything is evenly coated.
