1. Cut the zucchini lengthwise into slices about 0.5 cm thick. Sprinkle with a little salt and set aside briefly. Mix the olive oil with finely chopped garlic, fresh parsley, and basil, then season with salt and pepper.

2. Now heat a pan, brush the zucchini slices with herb oil, and lightly fry them on both sides until soft and golden brown. Top each zucchini slice with some chicken and mozzarella, then carefully roll them up.

3. Next, place the rolls in a lightly oiled casserole dish. Sprinkle with breadcrumbs and Parmesan cheese, and drizzle with a few drops of olive oil. Bake in a preheated oven at 190°C (375°F) for about 15 minutes, until the cheese is melted and the top is golden brown.
