1️⃣ Prepare the base
Finely crush the cookies and place them in a large bowl.
Add the softened butter, sugar, cocoa powder, and milk.
Mix and knead until you obtain a smooth and pliable dough.
2️⃣ Shape and rest
Place the dough on cling film and shape it into a tight roll.
Wrap carefully and refrigerate for at least 2 hours
to allow the dough to harden.
3️⃣ Slice
Remove the roll from the refrigerator and slice it into rounds
about 2 cm thick.
4️⃣ Coat
Melt the milk chocolate in a double boiler or in the microwave.
Dip each biscuit in the melted chocolate, then arrange them
on a sheet of parchment paper.
5️⃣ Finish
Immediately sprinkle the biscuits with chopped pistachios
while the chocolate is still liquid.
Let them harden in the refrigerator.
💡 Tips & Variations
• Replace the pistachios with chopped hazelnuts or almonds.
• Use dark chocolate for a more intense flavor.
• These biscuits will keep for several days in the refrigerator in an airtight container.
• Remove them from the refrigerator a few minutes before serving for the perfect texture.
