Mushroom Krosse Pancakes

Wash and dry the mushrooms, and cut them in half or leave them whole (if they are small).
In a bowl, whisk the eggs with a pinch of salt and pepper.
In separate bowls, prepare the flour and breadcrumbs.
Dip each mushroom first in the flour, then in the egg, and finally in the breadcrumbs.
Heat the oil in a frying pan and fry the mushrooms until golden brown on each side (approx. 3-4 minutes). Drain on paper towels and sprinkle with chopped parsley or chives. Serve with your favorite sauce – garlic sauce works best for me. Save this recipe, because I guarantee you’ll be making it again!
