Step 1: Make the Cheesecake Layer
In a medium bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy. Gently fold in the whipped cream or Cool Whip, taking care not to overmix so the texture stays light.
Step 2: Prepare the Pudding
In another bowl, whisk the instant pudding mix with the cold milk for about 2 minutes. Let it rest for 5 minutes until it thickens into a smooth, spreadable consistency.
Step 3: Assemble the Layers
In a trifle bowl or a 9×13-inch dish, arrange a layer of vanilla wafers on the bottom. Top with sliced bananas and strawberries, then spread half of the pudding over the fruit. Repeat the layers once more with wafers, fruit, and the remaining pudding.
Step 4: Add the Cheesecake Topping
Carefully spread the cheesecake mixture over the top layer. Use the back of a spoon to swirl and smooth the surface.
Step 5: Chill
Cover tightly and refrigerate for at least 4 hours. For best results, let it chill overnight so the wafers fully soften and absorb the creamy layers.
Step 6: Garnish and Serve
Before serving, decorate with extra vanilla wafers, fresh strawberry halves, or a drizzle of caramel sauce if desired. Serve well chilled.
