Choosing the right offshoot, the first key step

It all starts with a plump, fresh piece of ginger with a few “eyes”—those little dots from which future shoots will grow. Avoid pieces that are too dry or shriveled, and choose organic ginger to ensure lush growth.

Pro tip:   Soak the rhizome in lukewarm water for a day before planting. This will awaken the buds and promote rapid germination. Then cut it into 3-5 cm long sections, each with at least one visible bud.
