Homemade Mexican Pizza

    1. Prepare the Ground Beef: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat, then add the taco seasoning mix and water. Stir to combine and let simmer for about 5 minutes, or until the mixture thickens. Set aside.
    2. Crisp the Tortillas: In a large skillet over medium heat, add a small amount of vegetable oil and heat until shimmering. Add one tortilla at a time and cook for 1-2 minutes on each side, or until golden and crispy. Repeat with the remaining tortillas, adding more oil as needed. Set the crispy tortillas on a plate lined with paper towels.

  1. Assemble the Mexican Pizzas: Preheat your oven to 400°F (200°C). Place three of the crispy tortillas on a baking sheet. Spread a layer of refried beans on each, then top with the seasoned beef mixture. Place another crispy tortilla on top of each and spread a thin layer of salsa or taco sauce over it. Sprinkle each with shredded cheese, diced tomatoes, black olives, and red onions.
  2. Bake: Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
  3. Serve: Remove from the oven and let cool for a few minutes. Garnish with sliced green onions and serve warm. Cut each pizza into quarters for easy serving.
