🥗 Homemade canned vegetable salad – summer freshness all year round
Do you have an abundance of vegetables from the garden or do you just want to preserve the taste of summer until winter? This crunchy canned vegetable salad is full of color, flavor and vitamins – completely without preservatives or additives. Perfect as a side dish for meat, sandwiches or as a quick dinner.
📝 Ingredients (for about 3–4 liter jars):
🥒 The base for the salad:
2.5 kg tomatoes
1 kg cucumbers (soak in cold water for 3–4 hours beforehand)
700 g bell pepper (preferably in different colors for a nice presentation)
800 g onion
1 whole garlic clove
40 g fresh parsley
40 g fresh dill
40 g fresh basil
2 tablespoons salt
150 ml vegetable oil (e.g. sunflower oil)
🫙 For each 1 liter jar:
1 teaspoon granulated sugar
1 teaspoon vinegar (8%)
