Grind half of the flaxseeds into a powder.
Put the oatmeal, flax seeds (whole and ground), sunflower seeds, nuts, pumpkin seeds, sesame seeds and cranberries in a bowl, salt and mix. Pour hot water into the other bowl, add honey and oil and mix. Then pour the wet ingredients into the dry ones – mix everything well and let it rise for about 2-3 hours.
Then pour the mixture into a baking paper-lined dish. Press well and evenly. Place the dish in a preheated oven at 180 degrees Celsius (I use top and bottom heat without hot air).
My bread baked for 1 hour. Remove the baked bread from the baking sheet and let it cool on a rack. Only cut the bread with a sharp knife when it is completely cooled.
I store the bread wrapped in baking paper in the refrigerator.
