Fried cod with lemon butter sauce

Ingredients:
FOR THE COD:
• 4 cod fillets (about 150–200 grams each)

• Salt and pepper to taste

• ½ cup flour (for dredging)

• 2 tablespoons olive oil

• 1 tablespoon unsalted butter

For the lemon butter sauce:

• 3 tablespoons unsalted butter

• 2 cloves garlic, finely chopped

• Juice from 1 lemon (about 3 tablespoons)

• Zest from 1 lemon (optional, for extra tartness)

• ¼ cup chicken or vegetable broth (optional for a thinner sauce)

• 2 tablespoons fresh parsley, chopped

• Salt and pepper to taste
