Easy Stuffed Pepper Casserole

  • Add the Cheese: Once the rice is tender, stir in about ½ of the cheese (¾ cup of shredded mozzarella and ¾ cup of shredded cheddar) until it is melted and fully incorporated. Sprinkle the remaining cheese over the top of the casserole. Put the lid back on the pan and let the cheese melt. If your pan is oven-safe, you can place it under a broiler for a few minutes to melt and brown the cheese faster.
  • Serve: Remove from the heat and serve immediately while hot.
