1️⃣ Grate the zucchini and carrot using a coarse grater. Lightly salt the zucchini, let it rest for 10 minutes, and then squeeze out any excess water.
2️⃣ In a bowl, combine the vegetables with the eggs, grated cheese, garlic, flour, and parsley, and season to taste.
3️⃣ Mix well – the mixture should be sticky but firm.
4️⃣ With wet hands, form sticks and place them in a preheated pan with a little oil.
5️⃣ Fry on both sides until golden brown – about 2-3 minutes per side.
6️⃣ Drain on a paper towel and serve with your favorite dip (garlic, yogurt, or herb dip are perfect!).
