Prepare the Potatoes
Wash and peel the potatoes (optional). Cut them into small, even cubes for uniform cooking.Parboil (Optional but Recommended)
Bring a pot of salted water to a boil and cook the potato cubes for 5–7 minutes until just tender. Drain well and let them steam-dry for a few minutes.Season
In a large bowl, toss the potatoes with olive oil, garlic, paprika, oregano, salt, pepper, and parsley until evenly coated.Bake
Preheat the oven to 200°C / 400°F.
Spread the potatoes in a single layer on a baking tray lined with parchment paper.Roast
Bake for 25–30 minutes, flipping halfway through, until golden brown and crispy on all sides.Finish & Serve
Taste and adjust seasoning if needed. Sprinkle with Parmesan or chili flakes if desired. Serve hot.
Tips & Variations
For extra crispiness, use cornstarch (1 teaspoon) in the seasoning mix.
You can also cook these in an air fryer at 190°C / 375°F for 15–18 minutes.
Add rosemary, thyme, or smoked paprika for a different flavor profile.
Serve with garlic yogurt sauce, sour cream, or spicy mayo.
