
Crispy Chicken Fritters
Make the chicken mixture: Combine the shredded chicken, Dijon mustard, and egg in a large bowl. Mix well until evenly combined.
Add spices and breadcrumbs: Add dried thyme, onion powder, garlic powder, salt, and black pepper to the chicken mixture. Stir well. Then add the breadcrumbs and mix until the mixture holds its shape but is not too dry. If it is too wet, add a little more breadcrumbs.
Form the fritters: Use your hands or a spoon to shape the chicken mixture into small patties or fritters, about 2 inches (5 cm) in diameter. Place them on a plate or baking sheet.
Heat the oil: Heat about 1/4 inch (0.6 cm) of oil in a large skillet over medium-high heat. The oil is hot enough when a small piece of the mixture sizzles when dropped.
Fry the fritters: Carefully place the fritters in the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown and crispy. Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
