Cook the Potatoes
Wash the potatoes and boil them whole in salted water until tender (about 15–20 minutes).
Drain and let them cool slightly.Prepare the Filling
In a pan, heat olive oil over medium heat.
Add the diced bacon and cook until crispy.
Remove from heat and set aside.Hollow the Potatoes
Cut the top off each potato.
Carefully scoop out the center, leaving a thick shell.
Mash the potato flesh with butter, salt, and pepper.Add Cheese & Bacon
Mix most of the bacon into the mashed potatoes.
Add half of the cheese and mix well.Stuff the Potatoes
Fill each potato shell with the mixture.
Top with the remaining cheese and a little extra bacon.Bake
Place the stuffed potatoes on a baking tray.
Bake at 200°C / 400°F for 12–15 minutes, until golden and crispy on top.Serve
Garnish with chopped parsley or chives.
Serve hot while the cheese is perfectly melted.

You can replace bacon with ham or smoked turkey.
Add garlic or onion for extra flavor.
