Mocha cake with chocolate-rum

 

Ingredients:
For the base (biscuit):
4 eggs (whites and yolks separated)
100 g sugar
80 g plain flour
20 g cocoa
1 teaspoon instant coffee (dissolved in 1 tablespoon hot water)
A pinch of salt
For the chocolate-rum cream:
200 g good-quality dark chocolate (min. 70%)
200 g butter (room temperature)
150 g powdered sugar
2 tablespoons rum (or substitute: coffee liqueur or 1 teaspoon rum flavoring + 1 tablespoon water)
1 teaspoon instant coffee (dissolved in 1 tablespoon water)
For pouring and decoration:
100 ml strong black coffee (flavored with rum, if desired)
Chocolate ganache or cocoa powder for sprinkling
